As many would see Coconut Jaggery for the first time, we are keen to add more interesting facts about Coconut Jaggery. It looks exactly like Palm Jaggery and its making process is the same as well. Neera or pathani as we would call in south is extracted from Coconut trees. It is extracted by scratching or slicing the spathes of Coconut trees and neera is collected as drops for several hours. Fresh Neera is now heated to evaporate the moisture content in the neera. Once Neera turns into a thick syrup, it is poured into coconut shells or other molds and cooled down. Unlike Palm trees, coconut neera is available through out the year making is very easier to avail throughout the year. We are working to bring a youtube video soon on the complete process.
Our Jaggery is fresh and free from any preservatives or chemicals. It is far more healthier and natural compared to the refined sugar available in the market. Coconut Jaggery can be used just like the regular cane jaggery to any sweets or pongal.
